I think salads sometimes get a bad rap. As if eating them has to be a dreaded task that we’re forced to perform. I’m here to tell you that it doesn’t have to be this way. Salads can be a deliciously healthy part of your overall diet.

I haven’t always been a fan of chicken salad, that is until I had some delicious chicken salad at a potluck a few years ago. After the potluck, I came straight home and tried to recreate the recipe.
Tabouli, called “Taboula” in Assyrian, is a delicious and healthy salad which is eaten in most Middle Eastern countries. The most over-powering ingredient in tabouli is usually parsley.
