INGREDIENTS

–olive oil –shallots –pitted cherries –balsamic vinegar –sweet red wine –salt –black pepper –chipotle pepper –butter

– Heat oil in a small pot, and saute the shallots until caramelized.

STEP 1

– Add cherries, vinegar, and wine. Simmer for twenty minutes to reduce.

STEP 2

– Season with salt, black pepper, and chipotle pepper (if using). Swirl in butter.

STEP 3

Serve with lamb, pork, or chicken.
