CREAMY TURKEY SOUP

This dreamy Creamy Turkey Soup is hearty, rich, and so filling! I look forward to preparing it every year,  after Thanksgiving.

So, after your Thanksgiving meal, don't toss the turkey carcass! You'll need it to make the turkey stock.

Ingredients

turkey stock unsalted butter celery carrots onion garlic  flour milk/half-n-half barley corn salt/pepper thyme

– Begin by stripping your turkey carcass of most of the meat. You will be adding it back in later!

STEP 1

– Place turkey carcass into a large soup kettle and cover with water. Bring to a boil, then simmer for at least 1 hour. 

STEP 2

Strain 10 cups of turkey stock.

STEP 3

– Strip turkey meat from the cooled carcass and cut into bite-size pieces. Add more turkey, if needed, to equal  4 cups.

STEP 4

– Melt butter in a large soup pot. Saute celery, carrots, onions, and garlic for a couple of minutes.

STEP 5

– Add flour and stir for a few more minutes.

STEP 6

– Gradually add half of the reserved broth. Bring to a boil, then simmer until thickened.

STEP 7

– Add remaining broth, barley, corn, salt, pepper, reserved turkey, and thyme. Reduce heat; cover, and simmer for 35 minutes or until barley is tender.

STEP 8

– Add milk and half-n-half, and simmer for an additional 10 minutes.

STEP 9
