Krumkaker Norwegian Christmas Cookies

The delicate and crispy cookies are flavored with cardamom and almond extract, which gives them their distinct flavor.

• eggs • granulated sugar • unsalted butter  • whole milk  • all-purpose flour • cardamom  • almond extract • salt • oil (for seasoning the iron)

You'll also need the following ingredients:

– Season then heat Krumkake Iron on the stove over low-medium heat for 3 to 5 minutes.

STEP 1

– Crack eggs into a medium-sized bowl and whisk for 60 seconds. Add sugar and whisk to combine.

STEP 2

– Pour melted butter into the bowl and whisk. Add milk, flour, cardamom, almond extract, and salt. Mix until combined.

STEP 3

TIP: Refrigerate the batter for 30 minutes.

Cook the cookies for approximately 25 seconds (using a timer). Turn the iron to the other side and cook for another 25 seconds. The time may need tweaking.

STEP 5

TIP: If batter oozes out, wipe with paper towel and use less batter next time.

Remove Krumkake from the iron and roll around a wooden cone.

STEP 6

The cookies begin to harden almost immediately. Set the rolled cookie seam-side down while you prepare the next one. 

STEP 7

TIP: Some people like to roll the Krumkaker on the hot iron while they are still pliable. Try doing it both ways and see what method you prefer. 

TIP: Krumkake freeze well, but are fragile, so freeze in a rigid container.

Fill the cooled Krumkake with whipped cream and berries.

TIP: If you fill them too soon, they will get soggy. Wait until you are ready to serve them.
