Holubtsi is a Ukrainian Stuffed Cabbage dish comprised of tender cabbage rolls, stuffed with a mixture of seasoned ground beef or pork, rice, and onions. The cabbage rolls are baked in a tomato-based sauce and served with sour cream.

Ingredients

Cabbage Pork or beef Carrots Onion Parsley Garlic  Egg Tomato Paste Oil  Salt Malic acid Black pepper Rice

Sauce Ingredients

Water Tomato paste Salt Malic acid Sugar Vegetable oil

Wash, core, and boil cabbage; simmer until the outer leaves can easily be pulled off with tongs.

Continue until all the leaves are cooked.

Slice the leaves into manageable pieces.

Mix ground pork, carrots, onion, parsley, garlic, egg, oil, tomato paste, salt, black pepper, paprika, and uncooked rice.

Slice the large spine going down the middle of the leaves, and use to layer the bottom of a large, heavy-bottomed pot.

Fill the trimmed cabbage leaves with 1 tablespoon of filling mixture and roll the leaves tightly over the filling.

Place the stuffed cabbage seam-side down into the lined pot; continue until you have one layer, then start another layer.

If you run out of cabbage leaves, you can fill onions too!

Add sauce ingredients to a small pan. Whisk over medium heat until thesauce comes to a boil.

Prepare Sauce

Pour sauce over stuffed cabbage, cover the pot, and bake at 325  degrees F for one hour or until the rice is tender.

Cool slightly before serving.

Serve with a dollop of sour cream.
