Dill Pickle Chopped Salad

Ingredients

Salad

  • 4 cups butter lettuce (or other lettuce)
  • ¼ cup fresh dill
  • 2 green onions
  • 1 cup diced dill pickles
  • 2 large radishes
  • 2 cups coleslaw mix

Dressing

  • 3 tablespoon fresh lemon juice
  • 2 tablespoon olive oil
  • 3 tablespoon mayonnaise (or yogurt)
  • 1 tablespoon pickle juice
  • teaspoon sea salt
  • teaspoon freshly groun black pepper
  • ¼ cup fresh dill
  • 1 cup crumbled feta cheese

Instructions

  • Roughly chop butter lettuce, fresh dill, green onions, and pickles. Julienne radishes and mix everything together in a large bowl with the coleslaw mix.
  • In a small bowl, whisk together lemon juice, olive oil, mayo, pickle juice, salt, pepper, and fresh dill.
  • Just before serving, drizzle dressing over the dill pickle salad and toss until mixed thoroughly.
  • Top with feta cheese and serve.

Notes

  • Claussen kosher dill spears work really well for a salad like this as they're flavorful, crunchy, and easy to find at most grocery stores. If you're not sure which pickle jars to shop for, Claussen pickles are the best!
  • If you want some extra crunch to your salad you can add pita chips, croutons, or wonton strips, or, as a healthier option, diced celery or red onion.
  • If you make this salad ahead of time, store the salad in an airtight container and add the salad dressing right before you plan on serving it.
