Cheesy Chipotle Chorizo Beans

INGREDIENTS

•1 12-ounce chorizo •1 medium Serrano  •2 canned chipotle peppers •2 cloves garlic  •2 16-ounce canned refried beans •1 cup shredded cheddar cheese

HOW TO MAKE CHORIZO BEANS

Fry the chorizo until all the fat is rendered.

STEP 1

Scoop the chorizo out of the pan and drain 75% of the fat. If you don't mind the extra fat, you don't need to drain it.

STEP 2

Chop chipotle peppers, Serrano, and garlic.

STEP 3

Add to the same pan and sauté for  a few minutes.

STEP 4

Add the chorizo back to the pan and cook for an additional minute.

STEP 5

Next, add refried beans and mix to combine. Mash beans for a smoother texture. 

STEP 6

Simmer for five to ten minutes, stirring occasionally.

STEP 7

Add shredded cheese, turn off the heat, and cover the pan until the cheese melts.
