Ingredients

Salad

  • 2 bosc pears
  • 8 cups arugula
  • ½ cup goat cheese
  • ½ cup cranberries
  • ½ cup walnuts

Vinaigrette

  • ¼ cup balsamic vinegar
  • cup olive oil
  • teaspoon sea salt
  • teaspoon pepper

Instructions

  • Thinly slice the pears. In a large bowl, toss arugula and pear slices together along with goat cheese, cranberries, and walnuts.
  • Whisk together balsamic vinegar, olive oil, salt, and pepper to create the vinaigrette. Drizzle over the salad and enjoy!

Notes

  • If you're going to store leftovers for another time, I recommend that you don't mix in the balsamic vinaigrette. Storing them separately will keep the salad fresh longer.
  • Crumbled bacon makes a great addition to this salad!
  • Fresh or dried mint or your favorite herbs can be added to the vinaigrette.
