Instructions
Add cored, peeled, and chopped apples, brown sugar, spices, salt, lemon juice, vanilla extract, and water to a heavy-bottomed pot.
Cook over low-medium heat for 15 minutes or until apples are tender but still hold their shape.
Notes
Combining sweet and tart apple varieties gives the best balance of flavor and texture.
Dice apples into uniform pieces so they cook at the same rate.
Layer the flavors. A splash of lemon juice brightens the flavor, while a dash of vanilla, cardamom, and nutmeg gives the compote extra depth.
Store compote in an airtight container in the fridge for up to a week or freeze for longer storage.
