Slice two strips of bacon in half to make 4 pieces and fry in a small, non-stick skillet over medium heat. Use a spatula to flip the bacon so that it's crispy on both sides. Remove bacon from pan and drain on paper towels.
Toast bagel, while you fry the egg to your liking in the same pan. Remove from heat and season with salt and black pepper.
Slice avocado and lightly butter bagel. Layer bagel with cheese, bacon, avocado, and fried egg. Drizzle with your favorite hot sauce. Cover with the other half of the bagel, then slice in half or enjoy as is!
Notes
I know this is a "bagel" breakfast sandwich, but if you are watching your carbs, a quick way to cut them by half is to use an English muffin!
If you don't own a toaster or a toaster oven, butter the inside of the bagel and grill it in a skillet, buttered side down, until golden brown.
For those with hearty appetites, you can double the amount of eggs, bacon, and cheese.
Leftovers can be stored in an airtight container in the fridge for a couple of days, after removing the avocado. To reheat, wrap in a paper towel and microwave for 30 to 60 seconds.
