This pear pie is absolutely delicious and so easy to prepare! It has a crunchy crumb topping and can be served with a scoop of vanilla ice cream or as is!
Prepare pie crust or defrost premade pie crust, if frozen. Roll out pie dough on a lightly floured surface, then transfer to pie plate. Trim excess dough or fold under, then flute edges. Refrigerate pie crust until needed.
Prepare Pie Filling
Meanwhile, peel and slice pears and add to a large bowl. In a separate bowl, mix brown sugar, flour, cinnamon, ginger powder, and salt. Sprinkle with lemon juice and vanilla extract, then gently stir until combined. Pour pear pie filling into the prepared pie crust.
Preheat oven to 400℉& Prepare Crumble Topping
Mix flour, and brown sugar until combined. Work cold cubed butter into flour and sugar mixture until crumbly. I start with a pastry blender, then use my hands.
Place the pie pan on a cookie sheet and cover pie with silicone pie edge protectors. Bake for 15 minutes, then turn the temperature down to 350℉ and bake for 45 minutes more, or until the juices ooze out from under the crumb topping, and the crust is golden brown.
Serving Suggestions
Allow to cool before slicing. Top with a scoop of vanilla ice cream before serving, or enjoy as is!
Notes
If you don't have enough pears, mix in some apples.
If you prefer a double-crust pie, omit the crumb topping and use an additional pie crust, either as-is or prepare a lattice crust.
When baking a pie, it's always a good idea to place the pie on a cookie sheet to catch all the juices. It's even better to line the cookie sheet with foil for easy cleanup.
