This honey syrup works great for cocktails, tea, marinades, sauces, and even home remedies! It only requires 3 ingredients and is quick & easy to make!
Combine ½ cup of water and ½ cup of honey in a small saucepan or pot. Simmer over low heat until honey has completely dissolved. Do not boil to preserve the beneficial bacteria in raw honey.
Rinse lemon, then thinly slice and remove seeds. Add lemon slices (one at a time) to an 8-ounce mason jar. Ensure each slice is submerged in syrup.
Store honey syrup in the fridge with lemons slices or remove the lemon slices to lengthen the shelf life.

This honey syrup is a great natural substitute for artificial sweeteners in hot or iced tea, but why stop there? You can use it to enhance cocktails, or any cold beverage, such as mocktails or even smoothies.
Notes
If you want to add more flavor, you can also add lemon zest, ginger, edible flowers, or herbs while the syrup is boiling, and then strain them out before storing.
If you want it very lemony, use the entire lemon, or add a few slices for a more subtle lemon flavor.
If you want a thicker syrup, you can increase the ratio of honey to water from 1:1 to 2:1.
When thickened, this honey syrup recipe is not only great with drinks but also works well drizzled over pancakes, waffles, cakes, etc!
When stored in the fridge in an airtight container, this honey simple syrup will last up to a month!
