Ingredients
1cupchopped loquats
1largetomato(chopped)
⅓cuponion(diced)
2jalapenos(diced)
2clovesgarlic(diced)
2tablespoonmint(chopped)
2tablespooncilantro(chopped)
2tablespoonlime or lemon juice
1tablespoonorange juice
1teaspoonolive oil
½teaspoonsalt
Instructions
Remove seeds and flower end of the loquats, then chop.
Add loquats to a bowl, then chop and add tomato, onion, jalapenos, garlic, mint, and cilantro.
Mix in lime juice, orange juice, olive oil, and salt.
If possible, allow the flavors to develop for a few hours before serving.
Notes
The heat in this recipe can be adjusted to suit your preference. If you prefer mild salsas, replace the jalapenos with bell pepper.For those preferring medium heat, one jalapeno should be perfect. However, if you're daring when it comes to spicy food, replace the jalapenos with a few habaneros instead!I also love the freshness that the mint adds to this salsa recipe. If you love mint, I would even suggest omitting the cilantro altogether and doubling the mint.Green onion or red onion can be used instead of yellow onion. As always, let your taste be your guide!
