Heat a lightly oiled 10" cast-iron skillet over medium heat. Sprinkle 2 tablespoons of mozzarella cheese on the bottom of the pan and top with a tortilla.
Spread approximately 2 tablespoons of your favorite pizza sauce on the tortilla. Sprinkle with most of the remaining mozzarella cheese and pizza seasoning. Add toppings and remaining cheese.
Remove the pan from the stove to the top rack in the preheated oven and broil for a couple of minutes or until the cheese is melty and the pepperoni is crispy.
Notes
Since the pizza will have a very thin crust, avoid piling on too many toppings. However, feel free to sprinkle your tortilla pizza with crushed red pepper flakes and garlic powder.
To keep the tortizza crust from getting soggy, avoid adding too much sauce.
Although the cheese on the bottom helps to make the tortilla pizza crispy, it does sometimes make the pizza stick to the pan.If that happens, use a thin metal spatula to remove the pizza from the pan.
These mini pizzas are meant to be a one-serving portion. If you have leftovers, wrap them in aluminum foil and reheat them in a toaster oven.
If you only have large tortillas, you can use a portion of the tortilla by slicing the tortilla in half or quarters to fit your pan.
