    Crispy Tortilla Pizza (Tortizza)

    Have you ever had a tortizza? It's thin-crust pizza made with a tortilla! Follow this easy tortilla pizza recipe for a delicious and satisfying pizza that's ready in under 10 minutes! You can customize the recipe to make low-carb tortilla pizzas, gluten-free, or air fryer tortilla pizzas!

    Get ready to learn how to make these delicious mini pizzas with tangy sauce, and gooey mozzarella cheese, then top them with your favorite ingredients!

    Being a former Chicagoan, I LOVE my pizza but I wouldn't necessarily call myself a pizza snob. From Chicago-style deep dish pizza to New York's thin crust, to smoked flatbread pizza, I love them all! That's why I didn't mind eating a lot of these mini pizzas to perfect the recipe, I mean somebody had to!

    Although I'm keeping this recipe simple and kiddo-friendly, I encourage you to try different ingredient combinations. I made many variations but my favorite had to be the one with creamy goat cheese and chunks of tender carnitas.

    🧐 Why This Recipe Works

    • This recipe requires very little prep time and only around 5 minutes of cooking time!
    • Unlike traditional pizza, there's no pizza dough to knead and proof, all you need is tortillas!
    • If you're making this pizza for kids, all you need is 3 basic ingredients: tortillas, pizza sauce, and cheese.
    • I tested this recipe with gluten-free tortillas, whole wheat tortillas, and low-carb (carb balance) tortillas and had good results with all of them!

    🛒 What Goes Into This Recipe

    🔖 Recipe Ingredients And Substitutions

    • Tortilla: I used 8" carb balance flour tortillas but you can get away with 10" tortillas you just may need a 12" cast iron skillet. Feel free to use regular, whole wheat, low-carb, or gluten-free tortillas.
    • Sauce: Use Ragu pizza sauce, Contadina pizza squeeze, marinara sauce, or make your own pizza sauce! If you do, you'll need canned crushed tomatoes, olive oil, salt, garlic powder, and oregano.
    • Cheese: If possible, use whole milk, low-moisture mozzarella cheese. You can also add parmesan cheese, smoked gouda, provolone, or your favorite cheese!
    • Pizza Seasoning: Pizza seasoning usually has a combination of dried herbs like basil, oregano, fennel, red pepper flakes, salt, etc. If you don't have it, you can add Italian seasoning or any of the mentioned dried herbs.
    • Toppings: I used regular pepperoni but you can try turkey pepperoni to cut down on the calories and fat. This is also your chance to use any toppings you prefer. Choose from mushrooms, olives, sausage, bacon, pineapple, ham, etc.

    • Cast iron skillet
    • Sharp knife or a pizza wheel

    🍕How to Make A Tortilla Pizza/Tortizza

    Preheat your oven broiler on low.

    Step 1: Heat a lightly oiled 10" cast-iron skillet over medium heat. Sprinkle 2 tablespoons of mozzarella cheese on the bottom of the pan and top with a tortilla.

    Step 2: Spread approximately 2 tablespoons of your favorite pizza sauce on the tortilla. Sprinkle with most of the remaining mozzarella cheese and pizza seasoning. Add toppings and remaining cheese.

    Pro Tip: Since the tortizza will have a very thin crust, avoid piling on too many toppings. However, feel free to sprinkle your tortilla pizza with crushed red pepper flakes and garlic powder.

    Step 3: Remove the pan from the stove to the top rack in the preheated oven and broil for a couple of minutes or until the cheese is melty and the pepperoni is crispy.

    Pro Tip: Although the cheese on the bottom helps to make the tortilla pizza crispy, it does sometimes make the pizza stick to the pan. If that happens, use a thin metal spatula to remove the pizza from the pan.

    Other Pizza Combination Ideas

    As I mentioned earlier, I experimented with a whole bunch of pizza combinations and I encourage you to do the same! Here are some of the ones I made!

    • pineapple habanero chutney and diced ham
    • pesto pizza with smoked chicken
    • margarita pizza with cherry tomato confit and fresh basil
    • vegetarian pizza using your favorite veggies

    How to Make Air Fryer Tortilla Pizza

    I tried this tortilla pizza recipe in my Ninja Foodi using the air-crisp option. Air Fryer tortilla pizza can be prepared by following these easy steps:

    • Heat your air fryer at 400 degrees for a few minutes.
    • Brush your air fryer basket with a light coating of oil then add the tortilla, sauce, cheese, and toppings.
    • Air fry the tortilla pizza for 5 minutes.

    After preparing tortilla pizza in an air fryer and in a cast iron skillet on the stovetop/oven, I definitely prefer the ones cooked in a skillet. Air-fried tortilla pizzas did not have the same crispy crust. However, if you prefer soft-crust pizza, you may like air fryer tortilla pizza more.

    "Tortizza" is derived from combining the words "tortilla" and "pizza" to describe a pizza that's made with a tortilla crust.

    What is a tortilla wrap pizza?

    Tortilla wrap pizzas are made by slicing a slit from the center of the tortilla to the edge and then visually dividing the tortilla into four quadrants. Next, place sauce on one quadrant, cheese on the other, and your toppings on the 3rd quadrant, and fold the tortilla until all the ingredients are inside the tortilla.

    To cook the pizza wrap, brush the outside with butter or oil and fry it in a skillet until golden and crispy and the cheese is melted.

    👩🏼‍🍳 Pro Tips

    • To keep your tortizza crust from getting soggy, avoid adding too much sauce.
    • These mini pizzas are meant to be a one-serving portion. If you have leftovers, wrap them in aluminum foil and reheat them in a toaster oven.
    • If you only have large tortillas, you can use a portion of the tortilla by slicing the tortilla in half or quarters to fit your pan.

    Ingredients
