Instead of the usual tomato-based sauce found in most pizza recipes, I like to add a light coating of tahini paste or garlic tahini sauce. I then layer the cheeses, sun-dried tomatoes, Kalamata olives, red onion, and gyro meat, then finish with a sprinkling of gyro seasoning!

🔖 Ingredients & Substitutions
- Gyro meat: You can use my homemade gyro meat recipe or any store-bought variety. Another option is to get gyro meat from your favorite Greek restaurant. You can also substitute chicken gyro meat for beef or lamb gyro.
- Pizza crust: Choose from flatbread, ready-made pizza crust like Boboli, naan bread, or homemade pizza dough.
- Sauce: Instead of using a traditional sauce, I brushed olive oil on the bottom of the pizza crust to achieve a nice crispness. For an extra flavor boost, I spread tahini paste on top, but tahini sauce would work wonderfully as well!
- Cheese: I used Asiago cheese as a base because I couldn't find Kasseri cheese locally. Another acceptable substitute would be mozzarella cheese. I also added rounds of goat cheese and sprinkled the baked pizza with crumbled feta cheese.
- Fresh Toppings: This pizza's toppings include sun-dried tomatoes, Kalamata olives, and red onion. If you don't have sun-dried tomatoes, you can substitute cherry tomatoes. Artichoke hearts would also be excellent on a gyro pizza!
- Optional: For a beautiful presentation, garnish with fresh chopped Italian parsley or fresh mint leaves.

🍖 How to A Make Gyros Pizza
Preheat oven to 450°F
Step 1: If using store-bought gyros, cook strips in a pan to render some of the fat, but don't overcook because it will continue to bake in the oven. If using my gyros recipe, only bake for 4 minutes, then remove from the oven and slice into 1-2" portions.
Step 2: Brush the bottom of the pizza crust or flatbread with olive oil, then flip over and brush tahini paste on top. Sprinkle with gyro seasoning. I used ½ teaspoon for a 12" crust. Use less on smaller crusts.
Step 3: Shred Asiago or Kessari cheese and add to the pizza crust. Slice goat cheese into 8 round slices and distribute equally over the pizza.

Step 4: Add sun-dried tomatoes, sliced Kalamata olives, and sliced (or diced) red onion. Finally, top pizza with gyro meat, and sprinkle with a pinch of gyro seasoning.
Baking Instructions
