If you're a fan of a traditional gyro sandwich, get ready to experience gyro meat in a whole new way! This twist takes your favorite flavors beyond the typical gyro pita.
Using flatbread, as in this BBQ chicken flatbread, or purchasing a premade pizza crust, can save a lot of time. Naan bread is another great option. However, if you want to tackle making the dough from scratch, try my lahm bi ajeen dough recipe. It's simple, easy to prepare, and makes an excellent pizza dough!
Instead of the usual tomato-based sauce found in most pizza recipes, I like to add a light coating of tahini paste or garlic tahini sauce. I then layer the cheeses, sun-dried tomatoes, Kalamata olives, red onion, and gyro meat, then finish with a sprinkling of gyro seasoning!

🔖 Ingredients & Substitutions
- Gyro meat: You can use my homemade gyro meat recipe or any store-bought variety. Another option is to get gyro meat from your favorite Greek restaurant. You can also substitute chicken gyro meat for beef or lamb gyro.
- Pizza crust: Choose from flatbread, ready-made pizza crust like Boboli, naan bread, or homemade pizza dough.
- Sauce: Instead of using a traditional sauce, I brushed olive oil on the bottom of the pizza crust to achieve a nice crispness. For an extra flavor boost, I spread tahini paste on top, but tahini sauce would work wonderfully as well!
- Cheese: I used Asiago cheese as a base because I couldn't find Kasseri cheese locally. Another acceptable substitute would be mozzarella cheese. I also added rounds of goat cheese and sprinkled the baked pizza with crumbled feta cheese.
- Fresh Toppings: This pizza's toppings include sun-dried tomatoes, Kalamata olives, and red onion. If you don't have sun-dried tomatoes, you can substitute cherry tomatoes. Artichoke hearts would also be excellent on a gyro pizza!
- Optional: For a beautiful presentation, garnish with fresh chopped Italian parsley or fresh mint leaves.

🍖 How to Make Gyros Pizza
Preheat oven to 450°F
Step 1: If using store-bought gyros, cook strips in a pan to render some of the fat, but don't overcook because it will continue to bake in the oven. If using my gyros recipe, only bake for 4 minutes, then remove from the oven and slice into 1-2" portions.
Step 2: Brush the bottom of the pizza crust or flatbread with olive oil, then flip over and brush tahini paste on top. Sprinkle with gyro seasoning. I used ½ teaspoon for a 12" crust. Use less on smaller crusts.
Step 3: Shred Asiago or Kasseri cheese and add to the pizza crust. Slice the goat cheese into 8 round slices and distribute them equally over the pizza.
Step 4: Add sun-dried tomatoes, sliced Kalamata olives, and sliced (or diced) red onion. Finally, top the pizza with gyro meat, and sprinkle with a pinch of gyro seasoning.
Baking Instructions
Step 5: Bake gyro pizza on the middle oven rack for 8-10 minutes, or until the cheese is melted and the crust is golden and crisp. Sprinkle with crumbled feta cheese and chopped parsley (optional) and serve!

🤷🏻♀️ Recipe FAQs
Gyros and souvlaki are both popular Greek dishes, but they differ in preparation and presentation. Gyros is made from pork, chicken, or lamb that's cooked on a vertical rotisserie/spit. The meat is sliced off in thin layers and often served on pita bread with toppings like tomatoes, onions, cucumbers, and tzatziki sauce.
Souvlaki, on the other hand, consists of skewered and grilled cubed and marinated meat. Sometimes vegetables are also added. It's usually served on a stick or in Greek flatbread or pita bread.
Gyros pizza is a creative dish that combines the flavors of traditional Greek gyros with the classic elements of pizza. Instead of the usual pizza toppings, gyro pizza features seasoned gyro meat (typically lamb, beef, or chicken). Other possible toppings include tomatoes, onions, olives, cucumbers, tzatziki sauce, and feta cheese.
"Gyro" is pronounced like "Yee-ro", and the plural "Gyros" is pronounced "Yee-ros."
"Gyros" means "turning" in Greek. The name describes how this meat is prepared. Ground pork, lamb, or beef is mixed with spices and formed into a loaf, then roasted around a rotating vertical spit. The meat is shaved into thin slices and served in pita bread or flatbread.
