Defrost country style pork ribs if frozen. Arrange ribs in your slow cooker.
Mix broth, chipotle sauce, soy sauce, and balsamic vinegar in a measuring cup. Whisk in brown sugar, pork rub, salt, garlic, and ground ginger, then pour over the ribs. Make sure that every piece is covered with the sauce.
Cover the slow cooker with the lid and lock it into place. Set the temperature dial to low. Set a timer for 6 hours. Check ribs after 5 hours; if necessary, cook for up to 6 hours.
Optional Step:
Once the ribs are ready, remove from the slow cooker and place on a foil-lined tray. Brush ribs with BBQ sauce, then broil for a minute or two until slightly charred.
Notes
Don't skip the broil! This step is optiona, but recommended. The slow cooker makes the ribs tender, but the broiler gives you a crave-worthy finish!
If you want to go the extra mile, sear the ribs before cooking. It adds a deeper, richer flavor.
Keep a close eye on the ribs while broiling. They can go from perfect to burnt in a few seconds!
Store leftover ribs in an airtight container for up to 4 days.
