Easy Pickled Carrots

INGREDIENTS

–1 lb. carrots  –1 small onion –3 jalapeños  –3 cloves garlic  –2 sprigs thyme –1 tsp oregano –2 bay leaves –1-¼ C vinegar –¾ cup water –2 tsp sea salt –1 tsp sugar

HOW TO MAKE PICKLED CARROTS

– Slice carrots, onions, peppers, and garlic, and add to a medium-sized pot, along with the herbs.

STEP 1

– Mix in the remaining ingredients and bring to a boil.

STEP 2

– Remove the pot from the stove and allow to cool slightly.

STEP 3

– Pour the mixture into one quart sterilized jar and seal.

STEP 4

– The carrots will be ready to eat in three days.
