    Cheesy Scrambled Eggs with Morel Mushrooms

    Loaded with potatoes, onions, garlic, cheese, and morel mushrooms, this Cheesy Scrambled Eggs with Morel Mushrooms Recipe is the perfect way to start off your day! Although the scrambled eggs are a great low-carb breakfast option, they're also great with buttered toast, or in a breakfast burrito.

    For the last couple of weeks, ok, since Mother's Day to be exact, I've been walking around our property with my head down, looking for mushrooms. Morel mushrooms to be exact. 🍄

    Around these parts, they're supposed to start popping around Mother's Day (God's gift to Montana moms)😉. I'm surprised I haven't bumped into a bear because that's how intent I've been on finding these highly prized mushrooms.

    After countless hours of searching, I have gathered enough morels to come up with a few morel mushroom recipes. This Cheesy Scrambled Eggs with Morel Mushrooms recipe is the first of hopefully many more Morel mushroom recipes to come!

    • These are the best Cheesy Scrambled Eggs you'll ever have! Besides having an amazing flavor, they're super easy to prepare.
    • You won't need a large number of morel mushrooms which means you can save your foraged morels for other recipes.
    • Both eggs and morels are nutrient-dense and high in protein which makes this recipe a great breakfast choice.
    • Cheesy scrambled eggs can be served in burritos which can be prepared ahead of time and reheated in the microwave.

    🛒 What You Need to Make This Recipe

    🔖 Recipe Ingredients and Substitutions

    • Mushrooms: I used approximately ½ cup of morels, however, if you have more, feel free to add them. What if you don't have morel mushrooms? You can still make this recipe using other mushroom varieties.
    • Bacon: Rendered bacon fat is used to cook the rest of the ingredients. If you substitute turkey bacon or low-fat sausage, you'll need to add butter or olive oil instead.
    • Potatoes: If you don't have potatoes, you can use frozen french fries, hashbrowns, or tater tots instead.
    • Creole Seasoning: The creole seasoning can be substituted with sea salt and black pepper or any other seasoning you like.
    • Cheese: Instead of cheddar cheese, try a Mexican blend or Colby Jack cheese.
    • Serrano Pepper: Serrano pepper is optional but recommended if you like spicy food.
    • Salsa or Hot Sauce: I like to have my cheesy scrambled eggs with Fire Roasted Salsa but Pace Picante Salsa or your favorite hot sauce can be used as well.

    🍳 How to Make Scrambled Eggs with Morel Mushrooms

    STEP 1: Begin by chopping the bacon and vegetables. Next, add bacon, onions, and potatoes to a cast-iron skillet or a large nonstick pan. Season with half of the creole seasoning. Cook for 5 to 10 minutes or until the potatoes are beginning to brown and the onions are starting to caramelize.

    STEP 2: Add Morel mushrooms, serrano pepper, and garlic. Continue to cook over medium heat for another 5 minutes or until bacon is crispy and potatoes are fully cooked.

    Pro Tip: The potatoes take the longest to cook. If you can easily slice through the potatoes with no resistance, they are fully cooked.

    STEP 3: Turn the stove off and add eggs to a measuring cup or a medium bowl. Sprinkle with remaining creole seasoning. Beat eggs vigorously with a whisk or fork for one minute. Turn stove on and set to low to medium-low heat. Pour eggs into the pan and mix to incorporate with other ingredients.

    STEP 4: Use a spatula to scrape the bottom of the pan and turn the egg mixture to form soft curds. This will also keep the eggs from sticking to the pan or forming a crust. When eggs are almost set, turn the stove off and add cheddar cheese.

    How To Make A Breakfast Burrito

    STEP 1: Char tortilla over an open flame to soften. Spread sour cream into the center of the tortilla and add cheesy scrambled eggs. Add cilantro and salsa or hot sauce. Roll tortilla into a burrito and serve.

    How do I make cheesy scrambled eggs?

    Vigorously whisk eggs before adding them to a non-stick pan with melted butter. Stir and fold continuously with a rubber spatula until almost set and soft curds form. Remove the pan from the heat and add shredded cheddar cheese. Lightly fold the cheese in to combine.

    When should you add the cheese to scrambled eggs?

    The cheese should be added when the eggs are almost set but still look wet or slightly under-cooked. At that point, you can turn off the heat and allow the cheese to melt into the eggs.

    What is the cardinal rule when cooking scrambled eggs?

    Vigorously whisk the eggs prior to scrambling them and don't overcook them.

    • If you're looking for high-protein mushrooms, morels are it! Just 3.5 ounces of morel mushrooms contain 3 grams of protein.
    • Breakfast burritos can be frozen for up to a few months. When you're ready to eat the burritos, thaw in the refrigerator overnight, then microwave for one to two minutes.
    • Don't skip whisking the eggs for one full minute. Incorporating air into the eggs makes them nice and fluffy.
    • If you like buttery eggs you can melt one tablespoon of butter (or more) in the pan before adding the eggs.
    • Veggies of choice can be added at the same time you add the mushrooms.

    Ingredients

    • 4 slices bacon
