The ingredients you need to make roasted pumpkin seeds depend on the flavor or flavors you choose to try. Here are some of the ingredients you may need.
- Pumpkin Seeds: Raw pumpkin seeds from one or more fresh pumpkins
- Oil: Olive oil, avocado oil, butter, or coconut oil.
- Spices: Himalayan salt, cinnamon, zaatar, cardamom, cayenne pepper, chipotle powder, and sumac powder.

Once you scrape the seeds out of the pumpkin, place them and any fibers still attached inside a large bowl and cover the seeds with warm water.


Remove the seeds that float to the surface, then separate the seeds from the attached stringy fibers. Dry seeds on a kitchen towel before proceeding with the recipe, unless you're infusing the seeds with salt first.

Preheat oven to 350°F.
Step 1: Remove seeds from the pumpkin and add to a bowl of water. Separating the seeds from the pulp. It's ok if not all the pulp comes off.


Step 2: Drain all the water, then pat dry the pumpkin seeds with a clean kitchen towel.


Step 3: Mix oil, lime juice, and spices. Toss with pumpkin seeds. Spread evenly on a baking sheet covered with parchment paper.


Step 4: Bake until toasted, approximately 20 minutes. Stir halfway through.

Step 5: Remove from oven, cool slightly before serving.

Salted Caramel Pumpkin Seeds
Melt 1 tablespoon butter (or coconut oil) and mix with 1 tablespoon brown sugar, ¼ teaspoon cinnamon, ¼ teaspoon cardamom, and ¼ teaspoon Himalayan salt. Toss with one cup of pumpkin seeds.
