Stir-fried rice, loaded with beef, corn, onion, carrots, garlic, and ginger, with the added kick of spicy peppers. This Easy Fried Rice Recipe is something I threw together recently when I had leftover Edamame Dill Rice. It took 15 minutes to prepare and came out so good, I just had to blog about it!
This easy fried rice is filling enough to serve on its own or serve it as a side dish with some Grilled Ginger Chicken, or Filipino Lumpia.

Why This Recipe Works
This easy fried rice recipe is amazingly versatile and very easy to prepare. It's one of those recipes that you can make in around 15 minutes.
I came up with this recipe with ingredients I had in my refrigerator. Next time I might toss in some zucchini or eggplant!
If you don't have corn or carrots, for example, you can add broccoli, mushrooms, or whatever you have in the fridge.
Have fun adding your own twist to this recipe, because I know my friend, Terry, will!
Terry has a habit of substituting ingredients to the point where the end result no longer resembles the recipe she started with.
Although I don't recommend that for all recipes, this easy fried rice recipe is one of those recipes that can be safely modified. So go for it, Terry; time to get creative!
How to Make This Recipe
Heat oil in a wok. Stir-fry the meat for one minute.
Add carrots and cook for an additional minute.
Add onion, ginger, and pepper. Stir-fry for one minute.
Add corn and garlic, continue to stir-fry for another minute.
Finally, add the rice and mix in with the other ingredients. Stir-fry for a few additional minutes.
Add soy sauce and stir in with the other wok ingredients.
Serve rice sprinkled with toasted sesame seeds and Sriracha sauce, if desired.
Recipe FAQ's and Expert Tips
Although many recipes suggest using Jasmine rice to make stir-fried rice, I actually prefer using Basmati rice.
I discovered this accidentally when I recently used some Edamame Dill Rice which I had made with Basmati rice.
After having three servings of the dill rice, I decided to use the remaining rice to make this easy fried rice recipe. It turned out to be a great choice because Basmati rice grains naturally don't clump together.
Fried rice is best when you use leftover rice If the rice is fresh, it has a tendency to clump together and result in mushy fried rice.
If you do want to use fresh rice, however, spread the rice on a tray and allow the rice to dry out for a few hours before using it. This should get rid of some of the moisture.
- Other vegetables that go great in this easy fried rice recipe include broccoli, bean sprouts, snow peas, zucchini, mushrooms, eggplant, scallions, and peas.
- Instead of beef, you can use chicken, shrimp, pork, or diced bacon. Or leave the meat out altogether to make vegetarian stir-fried rice.
- Besides sesame seeds, try adding toasted peanuts and chopped cilantro before serving.
- To add more protein, scramble a few eggs separately and toss them in with the rice. To save time, scramble the eggs with the vegetables before adding the rice.
