    🔖 Recipe Ingredients And Substitutions

    • Chicken breast: You can also use thighs, or any part of the chicken.
    • Garlic cloves: Use fresh garlic if possible. Otherwise, substitute with minced garlic or garlic powder.
    • Serrano: If you don't have a Serrano pepper, you can use a jalapeno or other green chillies.
    • Vegetable broth: I used homemade vegetable stock but chicken stock or broth is even better!
    • Oil: Feel free to use vegetable oil or olive oil if you don't have avocado oil.
    • Herbs: I used cilantro (coriander leaves), but you can also try flavoring your lemon coriander soup with parsley, thyme, and rosemary.
    • Other vegetables to consider adding: Broccoli, corn, and green onions.

    🤷🏻‍♀️ Recipe FAQs

What is lemon coriander soup made of?

Lemon coriander soup is made up of fresh lemon juice, broth, vegetables such as cabbage, carrots, onions, and coriander leaves (cilantro). Sometimes chicken is added to the soup as a source of protein.

Is coriander the same as cilantro?

In the US, we refer to the leaves and stems of the Coriandrum sativum plant as "cilantro", but we call the seeds "coriander seeds". In other countries, however, they are both simply referred to as "coriander". Ultimately, coriander and cilantro are the same thing!

    👩🏻‍🍳 Pro Tips

    • Garnish the soup with additional fresh coriander leaves or finely chopped garlic to add even more flavor!
    • To make this recipe vegan, you can either omit the chicken or substitute it with tofu or your preferred vegan protein.
    • Although this chicken lemon coriander soup tastes best when served fresh, you can store any leftovers in an airtight container for up to 3 days.
