- Chicken breast: You can also use thighs, or any part of the chicken.
- Garlic cloves: Use fresh garlic if possible. Otherwise, substitute with minced garlic or garlic powder.
- Serrano: If you don't have a Serrano pepper, you can use a jalapeno or other green chillies.
- Vegetable broth: I used homemade vegetable stock but chicken stock or broth is even better!
- Oil: Feel free to use vegetable oil or olive oil if you don't have avocado oil.
- Herbs: I used cilantro (coriander leaves), but you can also try flavoring your lemon coriander soup with parsley, thyme, and rosemary.
- Other vegetables to consider adding: Broccoli, corn, and green onions.

Step 1: Add 8 cups of water, chicken breast, ginger, and garlic to a large pot. Boil for 30 minutes or until chicken is cooked through. Remove and shred the chicken, then strain broth and set aside.
Step 2: Heat oil in the same pot. Add chopped cabbage, carrots, onion, and serrano. Chop cilantro stems starting from the bottom up to the leaves and add to the pot. Sauté over medium-high heat.
Step 3: Return the chicken and broth to the pot, along with vegetable broth, lemon juice, salt, and black pepper. Simmer for 5-10 minutes and serve.

- 1 teaspoon sea salt
- ¼ teaspoon black pepper
