- Chickpeas: I use canned chickpeas (garbanzo beans).
- Herbs: Dill weed and oregano.
- Lemon pepper: Alternatively, you can finish the chickpeas off with a little squeeze of lemon juice or a splash of red wine vinegar, though I would do so right before eating them so they don't become soggy.
- Salt: Sea salt or kosher salt can be used.
- Olive oil: I like to use olive oil or avocado oil but you can substitute cooking spray.
- Corn starch: This gives the chickpeas a nice crunchy crust. If omitted, they may not be as crunchy.
- Optional Ingredients: Thyme, garlic powder, onion powder.

Step 1: Drain a can of chickpeas, then rinse and pat dry with paper towels. In a sifter, toss chickpeas with cornstarch until chickpeas are lightly coated and excess cornstarch has been filtered out.
Step 2: Transfer to a bowl along with olive oil, dill weed, oregano, lemon pepper, and salt. Toss until chickpeas are evenly coated.
Step 3: Place Mediterranean chickpeas in air fryer basket in a single layer. Roast at 400°F for 10-15 minutes, tossing every 5 minutes until crispy. Cool, then enjoy!
