๐ What You Need For This Recipe
๐ Ingredients & Substitutions
- Chickpeas: I use canned chickpeas (garbanzo beans).
- Herbs: Dill weed and oregano.
- Lemon pepper: Alternatively, you can finish the chickpeas off with a little squeeze of lemon juice or a splash of red wine vinegar, though I would do so right before eating them so they don't become soggy.
- Salt: Sea salt or kosher salt can be used.
- Olive oil: I like to use olive oil or avocado oil but you can substitute cooking spray.
- Corn starch: This gives the chickpeas a nice crunchy crust. If omitted, they may not be as crunchy.
- Optional Ingredients: Thyme, garlic powder, onion powder.

๐คท๐ปโโ๏ธ Recipe FAQs
If your chickpeas aren't getting crunchy, it may be because they were too wet when they were placed in the air fryer, or they may simply need more time. Air frying chickpeas after their "best by" date can also sometimes cause them to taste stale and prevent them from getting crispy.
When roasted at high temperatures, especially in an air fryer, it's totally normal for chickpeas to pop in a manner similar to popcorn kernels or beans.
๐ฉ๐ปโ๐ณ Pro Tips
- All air fryers are different, so you may need to use less/more than the recommended amount of time!
- Chickpeas may be a bit soft while they're hot, but they should crisp up once they cool off. If not, try air frying them a bit longer.
- Keep roasting them until they're completely crunchy, without any moisture or give in the center. If there's any moisture left in them, they won't stay crunchy when stored!
- These air fryer chickpeas are best enjoyed shortly after cooking, as they tend to lose their crunchiness over time.
- You can store them either in an airtight container or an open bowl at room temperature.
