Kabak Mücveri (or kabak mücver) is a delicious Turkish dish, much like zucchini and corn fritters, minus the corn. These Turkish zucchini fritters are crisp on the outside, tender in the middle, and so flavorful!
So what exactly is kabak mücveri? Well, mücveri, or simply "mücver", depending on the region, are essentially vegetable fritters. Although "mücver" could, in theory, refer to fritters made with vegetables other than zucchini, such as carrot or potato, the term is primarily used to refer to zucchini fritters.
Zucchini, also known as "courgette" or "kabak", is the most commonly available summer squash in Turkey. So, in short, "kabak" means "zucchini", and "mücveri" means "fritters".
Turkish kabak mücver is light and flavorful with vibrant, fresh herbs like dill, parsley, and mint contributing to their unique taste. A sprinkle of feta cheese takes the flavor to the next level!
These patties make a delicious snack when eaten on their own, but can also be enjoyed over a Greek cucumber salad or easy falafel bowl as part of a meal.

- Zucchini: Also known as courgette, and the star of the show, you need 2 medium zucchini, so no substitutions!
- Onion: I use red onion and green onion, but you can use any kind!
- Egg: Eggs hold the zucchini mixture together. I use one egg, but you can use 2 if you want your fritters to be fluffier.
- Flour: Can be substituted with almond flour to make gluten-free zucchini fritters.
- Fresh herbs: I use fresh dill, fresh parsley, and fresh mint. I don't recommend using dried herbs.
- Spices: Garlic powder, salt, and pepper are all you need, but you could also add a little paprika, cayenne, or crushed red pepper.
- Feta cheese: This adds more depth and flavor to the kabak mücveri. Mix it into the batter or crumble it over the Turkish zucchini fritters before serving. You can also use fresh parmesan.
🥒 How To Make Kabak Mücveri
Step 1: Using the large holes on a box grater, grate the zucchini and place in colander. Sprinkle with 1 teaspoon salt and drain for 10 minutes. Squeeze remaining moisture out with your hands, then add shredded zucchini to a large bowl.

Step 2: Add finely sliced red onion, diced green onion, garlic powder, pepper, chopped herbs, and flour to the large bowl. Beat egg in a seperate bowl, then pour into zucchini batter and mix thoroughly.
Heat oil in a pan to 350 degrees F.
Step 3: Scoop one heaping tablespoon of zucchini batter for each fritter and add to the oil. Flatten into small patties with the back of a spoon or a spatula. Fry for approximately 2 minutes or until edges begin to turn brown. Flip and fry the second side for another 1-2 minutes or until golden brown. Drain Kabak mucveri on a plate lined with paper towels.

Plate kabak mücver and serve as an appetizer with crumbled feta and a squeeze of fresh lemon with some toum, tzatziki, or a spiced yogurt sauce on the side.
Kabak mücver can also be served as part of a mezze platter with Lebanese hummus, and tabbouleh. Still another option is to serve them as a side dish with kofta kebab, sumac chicken, and a fresh Lebanese fattoush salad.

Mücver date back to the Ottoman Empire between the 14th-20th centuries. However, the term was originally spelled "mücmer" and was in reference to a cooking technique, rather than a dish.
"Kabak" is pronounced exactly as it is spelled. While we simply don't have the sounds in the English language to properly pronounce "mücveri" as they would in Turkey, we can do better than "muk-very". In Turkish, "C" is pronounced like "J", so the most accurate way to pronounce "kabak mücveri" is like "kabak mooj-veer-ee."
