Who knew leftovers could lead to pizza perfection? I recently whipped up the most delicious spinach and feta pizza I’ve ever tasted using leftover spinach and cheese fatayer filling and toum (Lebanese garlic sauce). The result? A flavor-packed, crave-worthy creation that’s also easy to prepare.

Don't you love it when you can take leftovers and turn them into something even better than the original recipe? That's exactly what I did when I didn't feel like forming fatayer (spinach hand pies) and decided to use the filling to make spinach feta pizza instead.
Fatayer filling consists of spinach, scallions, and fresh herbs like dill, and mint. But that's not all! The filling is seasoned with sumac, za'atar (see substitute for za'atar post), red pepper flakes, and feta cheese.
Although I used leftover fatayer dough to make the pizza, we're making this feta spinach pizza with Pillsbury pizza dough to make it even easier. You can also use flatbread, Boboli, or naan bread as the crust. I hope this white pizza becomes a favorite at your house, too!

🔖 Ingredients & Substitutions

- Pizza Crust: I'm using pre-made pizza dough, but you can substitute homemade pizza dough, flatbread, or naan bread for individual pizzas.
- Cheese: Feta cheese and mozzarella. Asiago cheese or goat cheese would also pair well with this pizza.
- Veggies/Herbs: Fresh spinach, scallions, dill, and mint. You can substitute red onion for scallions, but you would want to use less. Kalamata olives and mushrooms would be a great addition.
- Spices: Sumac, za'atar, and red pepper flakes
🍕 How to Make Spinach and Feta Pizza
Step 1: Add spinach, salt, and lemon juice to a large bowl, and stir to coat. Microwave for 1½ to 2 minutes, or until spinach is wilted. Place in a strainer to strain, then gently squeeze out the remaining liquid. Roughly chop spinach and add to a medium bowl.

Step 2: Chop scallions, dill, and mint leaves, then add to the chopped spinach. Mix in feta cheese, sumac, za'atar, and crushed red pepper.


Baking Instructions (Preheat Oven to 475°F)
Step 3: Remove pizza dough from the package and roll it out on a floured surface into a round disc (or keep it as a rectangle). Brush a large pizza pan with some garlic sauce, then shape the dough onto the pan.

Step 4: Distribute the spinach mixture over the pizza dough, then sprinkle with shredded mozzarella cheese.


Step 5: Bake pizza in a preheated oven on the bottom rack for 10 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Drizzle with more toum before serving.

Spinach should at least be wilted before adding it to the pizza. When cooked, spinach releases a lot of liquid, which must be squeezed out before adding it to your pizza, unless you enjoy soggy pizza!
Feta cheese can be added to pizza before baking or after. It's a matter of preference.
