- Puff pastry dough: One sheet of puff pastry.
- Apples: Gala apples, pink ladies, honeycrisp apples, and golden delicious are all great varieties to use for this tart. You can also use granny smith apples but they may look less attractive after baking.
- Jam: I use plum jam but you can also use apricot jam (or apricot preserves), this Pear Jam, Loquat Jam, Peach Preserves, or Cardamom Apple Preserves.
- Brie: Brie adds a slightly savory flavor to balance the sweetness. You can omit, substitute with sweetened cream cheese, or use goat cheese instead for a bolder, more savory flavor.
- Lemon juice: Fresh or bottled lemon juice to keep the apples from browning.
- Egg: For the egg wash.
- Pumpkin pie spice: Or apple pie spice. You can also use ground cinnamon, freshly grated nutmeg, and cardamom, but you may need to adjust the quantity.
- Caramel sauce: I like to use this homemade Salted Caramel Sauce Recipe made with brown sugar and butter but you can also use storebought caramel (the one from Trader Joe's is a great option). Alternatively, you can use honey or maple syrup.

Preheat oven to 425ยฐF
Step 1: Allow puff pastry to defrost for 30 minutes, then place on a lightly floured surface and use a rolling pin to flatten.
Step 2: Transfer puff pastry sheet to a parchment paper-lined pan and use a fork to prick a series of holes across the pastry to allow steam to escape. Spread jam over the pastry sheet, leaving a 1-inch thick border around the edges. Thinly slice brie and lay in rows across the tart.
Step 3: Use a mandoline or a sharp knife to thinly slice apples. Remove core and cut slices in half. Place in a bowl and coat with lemon juice and sprinkle with pumpkin pie spice. Arrange apple slices in 9 different stacks across the sheet, laying them in a different direction each time.
