    Lavash and Flatbread Thin and Crispy Pizza

    This Thin and Crispy Pizza Recipe takes under 30 minutes to prepare. We'll use Lavash Bread or flatbread as a base, then load it with your favorite sauce, cheese, and toppings. When you're short on time, this Thin Crust Pizza is a real-time-saver.

    I never make this Thin Crust Pizza the same way twice, and why should you? That's because the possible ingredient combinations are endless! You can have a completely different pizza every night, depending on the sauce, cheese, and toppings you use. Just don't come crying to me when you have to buy an entirely new wardrobe. 😉

    Why This Recipe Works

    This Thin and Crispy Pizza recipe comes in handy when you're out of yeast or you don't have time to prepare pizza dough from scratch. By preparing my Yeastless Lavash Bread ahead of time, it'll be in the freezer, ready to use the next time you've got a hankering for a thin and crispy pizza.

    Another great thing about thin crust pizza is you don't get that stuffed feeling that you get when you eat too much bread. Who wants to get full on a thick, doughy crust, when you can indulge on the sauce, cheese, and toppings?

    Traditional pizza sauce is boring. I like making things a little more interesting by using spicy Chimichurri Sauce, (a combination of pureed herbs, chili peppers, and garlic). If you're in the mood for sweet and spicy, try my Pineapple Habanero Chutney. It finally settles the argument as to whether pineapple belongs on pizza or not!

    Perhaps you feel like a garlicky pizza sauce instead? Or, hey, are you feeling extra adventurous? Try my Spruce Tip Pesto. It's very similar to basil pesto but instead of basil, I use spruce tips. It's like what I imagine Montana would taste like if you could take a bite out of the state!

    The final step to making your Thin Crust Pizza is adding your favorite toppings. However, if you need some ideas, I will chime in with some suggestions. Stick with your usual favorites or try something new.

    What Goes Into This Recipe

    Ingredient Notes

    • Pizza Crust — You have a few crust options including lavash bread, flatbread, Pita Bread, or Naan.
    • Pizza Sauce — Use traditional pizza sauce, or try Chimichurri sauce, BBQ Sauce, white sauce, or Pesto.
    • Cheese Options — Yes, you can use shredded mozzarella and parmesan, but why stop there? Sprinkle your pizza with some feta, gouda, blue cheese, asiago, or goat cheese too.
    • Toppings — Some meat choices include bacon, ham, sausage, pepperoni, chicken, and shrimp. Veggie options include green pepper, black olives, sliced onions, mushrooms, capers, jalapenos, eggplant, pickled nasturtium seeds, sun-dried tomatoes, and artichoke hearts.

    How to Make Thin and Crispy Pizza

    Step 1

    Prepare Lavash Bread or use your favorite flatbread. There are so many options!

    Next, make the Chimichurri Sauce which will be used in the place of pizza sauce. Or use one of the other sauces suggested earlier.

    Step 3

    Fry bacon, but not too crispy, it will continue to cook in the oven. When cool, chop it into small pieces.

    Step 4

    Next, chop ham (or whatever meats you want to use). Slice or chop your vegetables too. In this case, I'm using red onions and black olives.

    Preheat oven to 450 degrees F.

    Step 5

    Toss sliced onion into the skillet and sauté for a few minutes in the bacon grease until slightly caramelized.

    Step 6

    Brush approximately 2 tablespoons of Chimichurri or barbecue sauce over the cooked Lavash Bread or flatbread.

    Step 7

    Sprinkle half of the shredded mozzarella cheese over the sauce, followed by the ham, bacon, caramelized onions, and black olives. Top with the remaining shredded cheese.

    Step 8

    Bake for 5 to 7 minutes or until the cheese is bubbly and the edges of the pizza are golden. Sprinkle with crushed red pepper or garnish the crispy pizza with chopped cilantro.

    Recipe FAQs and Expert Tips

    How to make pizza crust crispy?

    • Use a precooked crust, like flatbread, naan, or lavash bread.
    • Brush the bottom of the crust with butter or oil, but only when you're not using a pizza stone. Oil and butter can damage your pizza stone in the long run.
    • Start the pizza on the bottom rack and finish it on the top rack.
    • Make the crust thin.

    What do you put on the bottom of pizza crust?

    Cornmeal is used sometimes used to keep the pizza from sticking to the pan or the pizza stone.

    How long do you cook pizza at 450?

    Made from scratch pizza takes approximately 10-12 minutes to bake at 450 degrees F. If using pre-cooked crust, it will take half that time.

    Should I oil my pizza stone?

    Never oil a pizza stone. The oil will stain the pizza stone and seep into the stone. Instead, use cornmeal to keep the pizza from sticking to the pizza stone.
