This dill pickle chopped salad is easily one of my favorite salads EVER. It's briny, citrusy, and bursting with pickle flavor! The secret is the light & refreshing dill pickle dressing.
Enjoy it as a meal, or as a side dish along with Traeger smoked chicken thighs, elk burgers, or whatever you're having for dinner. You could even use this dill pickle salad as a sort of coleslaw and top a nice crispy chicken sandwich with a few spoonfuls!

- Butter lettuce: I used butter lettuce but you can also try your favorite leafy greens such as romaine lettuce, spinach, spring mix, etc.
- Fresh dill: Dill weed can be used if absolutely necessary, but fresh dill is highly recommended.
- Green onion: If you don't like onions, parsley would be another good option.
- Radishes: You can also try red onion, cauliflower, or your favorite crunchy veggie.
- Coleslaw mix: You can also use green cabbage, red cabbage, green leaf lettuce, or kale.
- Lemon: Lime would be good too.
- Feta: Sharp cheddar cheese, Colby jack cheese, or your favorite cheese can be substituted.
- Mayonnaise: If you don't want to use real mayonnaise, try sour cream or better yet, yogurt!
- Salt & black pepper: I used sea salt and freshly ground black pepper. You can also try garlic powder, dried dill weed, dried mint, etc.

Step 1: Roughly chop butter lettuce, fresh dill, green onions, and pickles. Julienne radishes and mix everything together in a large bowl with the coleslaw mix.
Step 2: In a small bowl, whisk together lemon juice, olive oil, mayo, dill pickle juice, salt, pepper, and fresh dill.
Step 3: Just before serving, drizzle dressing over the dill pickle salad and toss until mixed thoroughly.
Step 4: Top with feta cheese and serve.
Pro tip: For a spicy version, add some Tabasco or pickled jalapenos!
